Corn Pudding

Here's a rather simple and delicious side dish to add to any holiday meal, corn pudding.  As long as I can remember, my mom has made this with every holiday meal she's made.  This year, Jon's family decided to do Thanksgiving the weekend before and his mom had asked me to make this side dish.  Because of the size of family we now are, I decided to double the recipe.  Here's what you'll need for the regular recipe:

1 can of corn
2 tsp sugar
1 egg
1/2 C evaporated milk
1 tbsp butter
salt
pepper

You'll want to preheat your oven to 350 degrees first.

Pour the corn into a casserole dish.  I normally use a small round casserole dish, but since I was doubling the recipe decided to use this instead.  I also drained some of the liquid out before pouring the corn in the dish.

Add some salt,

some pepper (it probably could have used more than what I put in),

and the sugar.

Crack the egg (or in my case 2 eggs) into a bowl and beat the egg.

Pour into the casserole dish.

In another bowl, pour the evaporated milk

and butter.  Then heat in the microwave.  The butter doesn't have to be completely melted.  I think I put mine in for a minute and that was more than enough.

Pour into the casserole dish.

Stir everything together.

You'll want to cover your dish, I used foil since the cover for this dish is plastic, and let it bake for 30 minutes.  I ended up having to bake this for 50 minutes.  Just do the knife test (Stick your knife in the center.  When you pull it out if stuff is stuck to the knife, it needs to bake a little longer.  I did it in 10 increments.  When your knife comes out clean, then it's done.) to see if it's done.  Even though I doubled the recipe, I'm also having oven problems.  So, if you decide to double this, don't take 50 minutes to heart.

Since I was making this for Jon's family's Thanksgiving dinner in Cumberland, MD (2 hours away), I choose to keep the foil on and then put the lid on to help keep all the heat in.

I also heated up the heat pack and placed it in the pocket in the casserole dish's carrying case.

Strapped it down and

zipped it up.  I then literally went over the river and through the woods to Grandma's house (ok, there's no woods that I had to go through, but you get the point)!

Even after a 2 hour drive and sitting at Grandma's for over 2 hours, the corn pudding was still warm when we placed it on the table with the rest of the food my mother-in-law made.
