Split Turkey Breast

A few weeks ago I had wanted to make turkey, but not a whole turkey.  Wegmans had exactly what I was looking for, a split turkey breast.  I've cooked several whole turkeys, but never a split breast.  I took to the
internet to find a recipe on how to cook it.  I found a recipe from Rachael Ray's website (Roasted Turkey Breast and Creamy Gravy and Cranberry Pomegranate Sauce).

You'll need:
  • The recipe calls for one whole breast or two split breasts (I only had one split breast)
  • 2 cloves of garlic, grated
  • 1 stick of butter, softened
  • 1/4 C of fresh herbs, parsley, tyme, chives, and rosemary (I didn't have fresh herbs and just used dry parsley)
  • 1 tbsp of lemon juice
  • salt and pepper

First preheat oven to 350 degrees.
  
I softened the stick of butter in the microwave.

Then added the garlic.  Since I only had the canned minced garlic, I didn't do anything to it.

I had a problem with getting all the dry parsley out so just added what I thought was enough.

Fresh squeezed lemon juice.

Mixed them all up.  Gave it a little try and it was rather delicious!

I put the split breast on a rack in my Cooks Essentials 6-qt stock pot.

 
I then covered the breast with the butter mixture.

After putting the butter mixture on, add the salt and pepper.

The recipe calls for you to be able to cook it for 45 minutes.  Before I started cutting up the breast, I checked with my meat thermometer and it said it was good.  Once I started cutting, I noticed that it was not cooked all the way.  I ended up cooking the breast for another 30 minutes.  So, in total the breast was cooked for 1 hour and 15 minutes.
