Cheesey Chicken Tater Tot Casserole

Another recipe I found via Pinterest and it's made in a crock pot/slow cooker.  I love meals that are cooked in a crock pot.  Just toss everything in the pot and walk away!  I found this recipe via The Country Cook.


Here's what you will need to make this recipe:
  • 1 (32oz) bag of frozen tater tots
  • 3oz of bacon pieces
  • 1lb boneless, skinless chicken breasts, diced
  • 2 C shredded cheddar cheese
  • 3/4 milk
  • salt and pepper, to taste
I had never thought to do this, but might from now on when using my crock pot.  Spray the whole pot with nonstick cooking spray.
Pour half of the frozen tater tots to layer the crock pot.

Add 1/3 of the bacon pieces over the tater tots.

Add 1/3 of the shredded cheddar cheese over the bacon and tater tots.

Add the diced chicken, I used 4 chicken breasts.  Season the chicken with salt and pepper.

Add 1/3 of bacon pieces and 1/3 of cheddar cheese over the chicken.

Add the remainder of the tater tots.

Add the remainder of the bacon and cheese. Pour the milk over the top.

Cover and let cook for 4 - 6 hours.  It said to have it on low, but on my crock pot 4 or 6 hours are high.

In my opinion, it was rather delicious.  It could use a lot more cheese and maybe some onions.  Kind of tasted like cheesey hash brown casserole with chicken.  Give it a try for yourself.
